&lt;p&gt;8 ea 6&amp;quot; Corn Tortilla&lt;br /&gt;12 oz Carrots, sliced and quartered&lt;br /&gt;2 TBSP BBQ Sauce&lt;br /&gt;2 ea Avocado&lt;br /&gt;2 1/4 TBSP Cilantro, chopped&lt;br /&gt;2 tsp Green Onions, sliced&lt;br /&gt;2 tsp Lime juice&lt;br /&gt;8 ea Lime wedge&lt;/p&gt;

&lt;li&gt;Make the BBQ carrots. Cut the carrots and place on a baking tray. Brush a small amount of the BBQ sauce onto the carrots and then place in a 350 F oven for 5 minutes. Brush the remaining BBQ sauce onto the carrots and allow to cook for another 5-7 minutes. remove form the oven and let cool.&lt;/li&gt;
