1 cup cooked quinoa, chilled
1/3 cup plain soy milk
1/4 tsp vanilla extract
1/4 cup plain nonfat Greek yogurt
1/4 cup diced mango
1 TBSP shredded coconut
Directions:
- In a small bowl, stir together cooked quinoa, soy milk, and vanilla extract.
- Top with plain Greek yogurt.
- Sprinkle with mango and garnish with coconut.
