Almond Pecan Granola

Ingredients: Makes 20 servings

Appetizers

1 1/2 pound old fashioned oats, dry
3 ounces sliced almonds
3 ounces sunflower seeds, unsalted
1 ounce brown sugar
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
3 TBSP pure maple syrup
2 tsp canola oil
2 ounces unsweetened applesauce
1/4 cup agave nectar
4 ounces pecan halves
4 ounces banana chips
3 ounces cranberries

Directions:

  1. Preheat oven to 300 degrees F.
  2. In large mixing bowl, combine all ingredients, expect pecans, banana chips and cranberries. Make sure the liquids evenly coal all ingredients. Coat a baking sheet with cooking spray or line with parchment paper. Spread mixture evenly onto sheet pan.
  3. Bake on center rack of preheated oven for 15 minutes. Toss granola and bake another 10 minutes. Granola should be a nice even, golden brown color.
  4. Place baking sheet on a wire rack to cool for 20-25 minutes or until room temperature. Break up granola into pieces. Add pecans, banana chips, cranberries and toss to combine.

about 1/3 cup or 2.25 ounces
